Skiba, Jan 4bd9c7eae2 transfair: Honor TRANSFAIR_TAG for the DIC TransFAIR image ...

dhki/vars already defaults TRANSFAIR_TAG to main, but the UMM site kept
running :latest (1.1.x), which lacks the DHKI workflow changes.
Projects that do not set TRANSFAIR_TAG still get :latest.
